Hi friends! Happy menu plan day to you all. I hope you had no problem getting your planning done this week. I know how some weeks can be harder than others sometimes. I enjoyed a nice Mother’s Day yesterday that started with breakfast in bed prepared by my 11 year old son. Such a sweetheart.
My new kitchen counters went in on Friday and I’ve actually been enjoying being in the kitchen this weekend 🙂 Let’s hope the excitement continues ha! I’ll share pictures soon of our “lipstick” facelift.

Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Turkey Avocado BLT Salad
Tuesday: Slow Cooker Paleo Carnitas served in lettuce wraps
Wednesday: One Sheet Pan Rosemary Chicken with Potatoes and Asparagus (using oil instead of butter)
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Sausage Pizza Egg Muffins
Saturday: Roasted Butternut Squash Soup
Sunday: YOYO (you’re on your own!)
