Hello there, we meet again! I hope you all had a nice relaxing Easter weekend with friends and family. Now it’s time to get ready for another organized week with a simple menu plan. I don’t know about you but after a big holiday meal I definitely want to eat lighter meals over the next couple of days.
Our big meal, made by my hubby, included a huge farm fresh chicken (so good!), mashed potatoes and tomatoes for me. The rest of my family had corn on the cob but I can’t eat corn.
I made Paleo Strawberry Apple Crisp for dessert but it was just okay, a little too sweet for me. Still trying to find the perfect Paleo recipe for my favorite dessert.
We’ve also had three days of snow over the weekend so just forget about what I said last week about spring being here. I should know better 🙁
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Homemade Chicken Soup (made using the leftover chicken carcass)
Tuesday: Continuing with chicken leftovers: Paleo Chicken Bacon Strawberry Salad
Wednesday: Pineapple Bacon Burgers (because bacon!)
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Shrimp Scampi
Saturday: Herb Pan Fried Pork Chops (I’ll sub the flour for something else) served with rice and broccoli
Sunday: YOYO (you’re on your own!)

What will you sub for flour in the pork chops? I love me some friend chops but have avoided it for this very reason! LOL Panko is out too and that was my favorite way to coat them. Have a great week!

Hi Kim, I’m thinking I would try tapioca starch or arrowroot flour. I’ll keep you posted as to how it turns out!

We had a 10 lb. ham for Easter so my plans for Tue and Wed are a Ham Noodle Casserole and Navy Bean Soup made with the bone of the ham. Haven’t gotten any further than Wed.
