Hi friends! I sat down to do up my menu plan as I usually do on Sunday night and went to search Pinterest for recipes only to find out that the Pinterest search wasn’t working. Ack! I didn’t really know quite what to do with myself, I’m such a creature of habit, but I eventually figured it out 🙂
Last week I was going to try making some cauliflower bacon biscuits but I just couldn’t do it. I don’t love cauliflower although I really wish I did because it’s so good for you. I’ll eat it occasionally but not too often. So instead of those biscuits I decided to a simpler Paleo one that didn’t involve yucky cauliflower. Although different from a regular flour biscuit, these healthy Paleo Almond Flour Biscuits were easy and fast to whip up and were really good. Nice to have a little something different for lunch.
If you haven’t had a chance yet to make up a menu plan for the week yet, it’s not too late. Pick out 4 or 5 EASY recipes, print them out, do a grocery shop and you’ll be all set for an organized week!
Here’s what my family will be eating this week.
My Weekly Menu Plan:
Monday: Oven Baked Quesadillas served with Caesar Salad and for me Bacon & Tomato Lettuce Wraps
Tuesday: One pan Lemon Chicken with Veggies (with asparagus instead of beans)
Wednesday: Italian Rubbed Pork Chops with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Healthy Tuna Stuffed Avocado
Saturday: Sweet Apple Pork Meatballs with zucchini noodles
Sunday: YOYO (you’re on your own!)
