Hi friends! How are you? Have a good weekend? It’s time to take 15 minutes and plan your menu for the week. I got a sweet email last week from a reader that says I’ve almost got her convinced to give menu planning a try. So I’m not giving up, I’m going to continue to try and convince all you fence sitters 🙂 My work here is not done ha! Tell me where you struggle and I’ll try to help. Life is so much less stressful with a menu plan, I promise you!!
Recipe Highlight:
One of the things many people struggle with is finding quick and easy recipes to get dinner on the table fast each night. All you need is recipes like this one for Slow Cooker Rosemary Garlic Roast Beef. It was absolutely delicious and seriously could not be any easier to prepare! You can not go wrong and you will love me forever 🙂 Just wish I’d taken a picture of it for you, oops.
New Cookbook:
I got myself a new Paleo cookbook that I’m excited to dig into. In addition to the recipes, it’s also got a fitness plan and menu plan component which looks really good. Anyone else have this one? I’ll let you know what I think of it after I’ve tried it out.
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: “Breaded” Paleo Chicken Cutlets served with green smoothies
Tuesday: Slow Cooker Honey Pork Chops and Apples
Wednesday: Slow Cooker Turkey Bolognese with Zucchini Noodles
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me bacon and eggs
Saturday: Breakfast for dinner…Coconut flour pancakes
Sunday: Church Potluck! Super excited about it as it’s our first potluck in our brand new church kitchen, whoot! I’m most excited about all the extra plugs we have now for all those slow cookers! I’ll be bringing: Slow Cooker Butternut Squash Soup and Paleo Chocolate & Caramel Slices.

I’ve been meal planning for years and don’t know how I would get by without it. I still struggle with one area, though – I always want to try new recipes or we get tired of eating the same things too often. That definitely makes it take longer than it probably should. 🙂

Oh I totally get it, I like eating new foods so I often make new recipes. But I also hate cooking so it’s a bit of a dilemma. I find that no matter what, as long as I keep the recipes to as few ingredients as possible I’m usually able to pull it off.
