Hi friends! Sometimes when I’m procrastinating from making up my menu plan, I make menu plan graphics instead. I was having trouble coming up with food to eat so this is what I did instead. Don’t we all look that happy getting dinner on the table in our button down shirts? Ha!
So this past weekend my hubby cooked up a whole farm fresh chicken, potato and asparagus dinner. He often gets in the kitchen on the weekends which is nice. He can never do anything half way though and still plates it up all fancy for us.
After a big chicken dinner he always likes to cook up some broth using the carcass so we can have homemade chicken soup the next day. Just boil the carcass with water and spices for a few hours and then remove the carcass and use the broth to make soup by adding whichever veggies you’d like. So easy, delicious and yummy!
I shared this photo below on Instagram last week of the glorious sunny day we had here. It felt so good to sit out there in the 7C (44F) “warmth” with my blanket and tea. That’s definitely not normal for us in February. I’m sure glad I took the time to enjoy it because the very next day we got a big dump of snow and the usual cold weather came back.
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Homemade Chicken Soup served with Almond Flour Biscuits
Tuesday: Sausage and Spaghetti Squash Chow Mein
Wednesday: Paleo Stuffed Peppers
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me BLT Avocado Lettuce Wraps
Saturday: Slow Cooker Chicken Drumsticks served with steamed broccoli
Sunday: YOYO (you’re on your own!)

Happy Monday! I am keeping my nieces for a few days this week, so meal planning was a must! Here is what we are having:
Monday – YOYO
Tuesday – Vegetable soup, cornbread
Wednesday – Breakfast for dinner (scrambled eggs, grits, hash-browns, cinnamon rolls, fruit, pigs in blankets)
Thursday – Spaghetti, tortellini, salad, garlic bread
Friday – Baked mac & cheese, deviled eggs, black eyed peas, corn on the cob, salad
Saturday – Lunch: taco bar at a birthday party
Dinner: Grilled chicken, baked potatoes & baked sweet potatoes, broccoli, roasted brussel sprouts, salad
Sunday – Lunch: Baked chicken & rice (x2), green beans, marinated veggies, lima beans
Dinner – YOYO
