Hi everyone! How was your weekend? Ready to get your menu for the week planned out?
As most of you know I’ve been eating Paleo for almost two years now as a way to manage my Rheumatoid Arthritis without any medication. It’s not a decision but as someone who hates to cook, some weeks can be a challenge that is for sure. It’s easy to get in a rut eating the same things day in and day out. Today I decided I needed to get out of that rut and make myself something new to eat. I’ve been craving onion rings so I found myself a Paleo Onion Rings recipe and got to work.
It took forever because we have such a small deep fryer but the end result was definitely worth it. These were so good. Mine look nothing like the pictures on the recipe post (shocking I know!), because they kept clumping together, but they still tasted yummy and hit the spot.
The best part of the recipe is that you don’t have to dip in wet ingredients and then into dry before frying. Instead it’s one mixed batter that you dip your onions into once, so much easier! Our deep fryer is a small Black & Decker. I’d love to get something bigger, does anyone have one they love and would recommend?

Monday: BLT Panini’s and BLT Lettuce Wraps
Tuesday: Paleo Slow Cooker Sticky Wings served with Spinach Mango Smoothies
Wednesday: Slow Cooker Pork Ribs with Killer BBQ Sauce
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Scrambled Eggs
Saturday: Taco Lime Shrimp Salad
Sunday: YOYO (you’re on your own!)

We just use a cast iron skillet for deep frying. It does a great job of keeping the oil evenly hot and its easier to clean, in my opinion.

That’s a good idea, plus I think it would keep them from clumping together which would be nice.
