Hi everyone and welcome to Menu Plan Monday! We had a great time celebrating my son’s 17th birthday over the weekend. His favorite dinner was absolutely delicious, thanks to my hubby. He was in charge of the ribs and they were amazing! He used this recipe for cooking them low and slow in the oven all afternoon and then throwing them on the grill at the end. He used regular (full of sugar) BBQ sauce for everyone else (I can’t switch them over) and for me I made up this Paleo BBQ sauce recipe which I thought was so yummy. I switched out the Balsamic vinegar for regular vinegar because I can’t stand Balsamic and it was still great. It made a big batch of sauce so now I have extras in the fridge for another meal.
This upcoming weekend is Thanksgiving here in Canada so I’m excited about that.Technically Thanksgiving is next Monday but we always do our big dinner on Sunday night.The kids are off school for four days and we are just going to relax and chill as a family. We’ll play some games, read some books and eat some delicious food 🙂 I’m only sad that my daughter isn’t coming home from University to join us…sniff.
My Weekly Menu Plan:
Monday: Easy Tin Foil Sausage and Veggies Dinner
Tuesday: Rosemary Butternut Squash Pear Soup
Wednesday: Paleo Meatloaf served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night! and for me Dilled Salmon Patties
Saturday: Breakfast for dinner: Almond Butter Blueberry Paleo Waffles
Sunday: Thanksgiving dinner: Easy Roast Chicken, Simple Roasted Sweet Potatoes and Garlic-Roasted Asparagus & Mushrooms. For dessert Paleo Pumpkin Pie Squares
