Hands down the longest recipe title I’ve ever created. Sure it’s a mouthful to say, but man is it the most delicious mouthful ever! These Chocolate Peanut Butter Cup Waffle Ice Cream Sandwiches are a combination of two recipes and the perfect way to send Summer out with a bang!
Last month, I shared with you my recipe for Chocolate Peanut Butter Peanut Butter Cup Ice Cream. Another mouthful! I loved the recipe so much that I decided to take it one step further and combine it with my Chocolate Yogurt Waffles. And then I might have decided to dip the whole thing in chocolate ganache. Because I kind of thing dipping things in chocolate ganache makes it taste a million times better. (And, I’m so right on this theory.)
- Chocolate Peanut Butter Cup Ice Cream
- Chocolate Yogurt Waffles
- 2 cups chocolate chips
- ⅔ cup whipping cream
- chopped peanut butter cups, optional
- In a microwave safe bowl, add chocolate chips and whipping cream. Microwave for one minute. Stir together until completely combined.
- To assemble sandwiches. Place a scoop of ice cream between two waffle quarters. Dip corner in chocolate ganache and place on plate. Top with additional chopped peanut butter cups, if desired.
- Continue until all sandwiches are created and place in freezer until set.
Peanut butter and chocolate lovers, this recipe is just for you! Do yourself a favor and make a batch this weekend.

Sweet mother of all things chocolate. I need this right now!!! Something tells me mine won’t turn out nearly as good as yours though…

You are so kind, Sessa – thank you! I promise though, this recipe is nearly foolproof. You can do it!
