It’s the week of May, it’s the week of May! I’m so happy we will welcome in the first of May on Thursday. I simply cannot wait because I’m hoping the warm weather will come with it 🙂
As many of you know I have a 14 year old son who has severe food allergies to gluten, dairy, eggs, fish and nuts. I’m always looking for recipes to make for him that are free of what he cannot have. Yesterday I made this amazing Gluten-Free & Vegan Banana Bread and it was so good. It was moist and not crumbly at all. Yum!

Friday: Pizza with regular quick homemade pizza crust for the family and Spaghetti Squash Pizza Crust for me 🙂
Saturday: Italian Grilled Cheese Sandwiches
Sunday: YOYO (you’re on your own!)

We tried the pork schnitzel recipe that you recommended and it was a hit! My husband was not looking forward to it because he remembered not liking it as a kid, so he was really surprised to find that he loved it.

Hooray for finding a delicious treat your son can enjoy! My oldest had a dairy allergy that she thankfully outgrew around the age of 10. It was always a joy to be able to find non-dairy pudding or ice cream that she could enjoy which wasn’t always easy to find in the small towns we lived in at the time.
