I rarely have recipes to post myself so I thought having someone experienced in such things would be a great addition to the Org Junkie lineup. Something that definitely makes meal planning and getting dinner on the table each night a bit easier is quick and flavorful recipes. I love to cook and experiment with new ideas, but also know with three little ones running circles – literally – around my house come meal time that I can’t be creating anything too time intensive. That’s where this recipe comes in. Not only is it budget friendly, but it literally takes minutes to prepare.
Chai Spiced Roasted Baby Carrots
32 oz. baby carrots
2 tablespoons olive oil
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon ground cloves
pinch ground nutmeg
pinch ground ginger
Preheat oven to 450 degrees.
On a baking sheet lined with a silicone mat or aluminum foil, toss carrots with olive oil. Season with salt and pepper. Roast for 30 minutes, stirring every 10 minutes.
Meanwhile, in a small bowl stir together all spices.
After roasting, toss carrots with spices to taste. You’ll likely find you’ll use only half of the spice mixture leaving the other half for a future recipe.
