Welcome back to Menu Plan Monday and Happy Thanksgiving to all my American friends!! I hope you all have a wonderful week that is all about family and friends and not about chaos and stress. Baking Fail:
This past week my oldest son (14) and I set out to make some gluten-free, dairy-free, egg-free sugar cut-out cookies. Well two batches later we still weren’t 100% satisfied. One batch we used straight margarine and they turned out too crumbly so the second batch we used 1/2 margarine, 1/2 lard and they weren’t bad but I still think they could be better.
We will keep trying though for sure. The only thing holding us back is we ran out of one of the flour ingredients we use to make his gluten-free flour blend, specifically the sweet rice flour. We can’t buy it in the small town we live in and haven’t been able to make it in to the city unfortunately. I’ve been searching for an online source here in Canada without any luck. Amazon.ca does have some but it is ridiculously overpriced. So we are on pause until we can get to the city but hopefully that won’t be too much longer, we just need the weather to cooperate with us as it’s a two hour drive away and we’ve been getting quite a bit of snow already.
Birthday Party:
My youngest son’s 8th birthday was a huge hit on Friday. It ended up being a snow day from school so we invited over a bunch of friends and they hung out with us the whole day. He loves being around people so he was super happy. He was also pretty happy with his chocolate cupcakes on chocolate cake birthday cake that he had asked for. It wasn’t the prettiest but it tasted pretty good 🙂
My Weekly Menu Plan:
Monday: Butternut Squash, Apple & Pear Soup
Tuesday: Slow Cooker Garlic & Rosemary Roasted Pork served with rice
Wednesday: Slow Cooker Tater Tot Casserole
Thursday: Leftover buffet
Friday: Dinner out!
Saturday: Crockpot Pizza Casserole
Sunday: YOYO (you’re on your own)

I totally tried to get him to let me change the color of the icing too but he insisted on chocolate. Too funny!

King Arthur Flour will be your friend. I think they ship to Canada, which if you’re looking at Amazon I suppose you are already willing to pay. Next, they have an amazing recipe archive AND a toll free baker’s hotline!! Those folks are awesome. Good luck!

We’ve decided that we’re going to host Thanksgiving next year, so those adorable printables will DEFINITELY come in handy! I’ll be cooking for about 36 people, after all.

My son was on a gluten free/ dairy free diet so I can oh so feel your pain. I started using bette hagman’s flour blend recipe that can be uses cup for cup with addition of zantham gum. I really like Bob red mills flour, not sure if they deliver to Canada. Good luck on your journey!
