I’m so excited to be guest posting for Laura while she’s away on a much deserved vacation!
I’m Melanie from Melanie Makes and I’ve been participating in Menu Plan Monday for four years now – crazy! I actually went back to my archives and found my first Menu Plan Monday submission from July of 2009. No matter how much has changed in my life since then, participating in Menu Plan Monday is such a great source of inspiration and accountability for me as i help care for our family of five. Having our evening meals planned in advance relieves so much guesswork and stress!
This is our last full week of summer vacation before my oldest two go back to school, so I’m going to try and keep things easy to allow us as much time as possible for playing!
Here’s what we’ll be eating this week :
Meatless Monday : Cumin Lime Black Bean Quinoa Salad. A Pinterest find and new recipe for us to try. This looks like something I could easily throw together while my kids are napping and then let it hang out in the fridge until dinner. I plan on pairing it with some fresh fruit or even smoothies.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say, I’m nice like that.
Tuesday : Slow Cooker Lemon Chicken. Talk about easy! I try to keep all the ingredients on hand for a no stress dinner option. Paired with fresh green beans or a salad and you’ve got the perfect light summer dinner.
Wednesday : Brown Sugar Glazed Pork Chops. Pork chops were on sale last week so I have quite a few packages stashed in the freezer. These look super easy to put together…as long as I remember to take them out to thaw in the fridge the night before!
Thursday : Cheesy Chicken Orzo. We tried this for the first time a month ago and it was a hit! I doubled the recipe to use an entire box of orzo and there was just enough left over for the baby to have it for lunch the next day. Definitely give this one a try!
Friday : Pizza. There’s no better way to start the weekend than with pizza. In my humble opinion, anyway! This is the perfect pizza crust no matter what style of crust you like and no matter what the toppings.

We try to have Meatless Mondays too. It’s usually for lunch and we have rice and beans. Except it’s lentils and rice this week. I was so sad when my daughter requested, “No beans please, it makes me gassy!”
