I think today will be quiet because it’s a long weekend in the US. Hope everyone had a great weekend!
Well I have to tell you I was totally taken by surprise by the comments on my 7 years of blogging post from last week. So many of you mentioned Menu Plan Monday as being your favorite thing about I’m an Organizing Junkie. That is so awesome to hear! Our participant numbers may have dropped in the last while (at one time we were up to 500!) but all those comments reminded me that even those who might not be participating are still finding MPM helpful each week. That makes me so happy! PS: If you haven’t entered yet to win a $100 gift card, you still can here.
I got some good mail on Friday. My Kraft What’s Cooking magazine came in. Yay! I love this magazine and love it even more that it’s free 🙂 The recipes are all usually quick and easy to make which is right up my alley. Of course the whole thing is a big advertisement for Kraft products but I just look past that 🙂
Recipe Highlight:
My favorite recipe from last week goes to the Black Bean and Corn Chicken Salad recipe. So yummy!
I’m eating gluten free so rather than put it in a pita pocket, I ate mine in hard corn taco shells. I also made it even quicker to throw together using a rotisserie chicken from the grocery store. Delicious!

My mom used to make us pizza burgers all the time! She’d use English muffins instead of regular buns, though. I cannot even remember the last time we had those, but they were so, so good!

You still get that magazine free? I had to pay last year for a subscription. Paying to have them advertise to me. Sigh. But I like them because I pass them to my daughter who is just learning to cook and their recipes are easy and great for a beginner.
Even though I don’t sign on to MPM and am notorious for my fits and starts with actually doing it, it is inspiring and I glean tons of recipes and ideas. I love it!

Wow now I feel really lucky that I’m still getting it for free! Someone else was saying that you now have to pay for it. Bummer! Although the digital copies are still all free on their website. Hope you are having a great week!

Laura, since you are gluten free and not all of your mpm recipes are, do you alter them to make them gluten free for yourself, or do you just make yourself something different?

Yes I always adapt. For instance, I’ll use gluten free bread as my bun for the burgers and I’ll use rice pasta (for the whole family) in the Chili Pasta Skillet.
