The Love of an Empty Fridge:
One thing that I love to do is get to an empty fridge every Sunday. It just makes me so happy! I know that might sound odd but there is something so refreshing about knowing that I stuck to my weekly menu plan and used up all the ingredients I bought for the week without waste. Since I get my groceries every week on Monday morning at 8:50 am (right after I drop my youngest at school) I love being able to restock an empty fridge and start my week off on fresh foot. What a feeling! Anyway imagine my surprise when I read a post last week by Rachel at The Minimalist Mom called Why I Love an Empty Fridge. Rachel feels exactly the same way I do! I love that. I also love that she is giving away $1 to Feeding America for every comment that she gets on that post up to $500.00. So if you’ve got a moment would you go over and leave a comment. Thanks!

So funny you post this today! I totally cleaned out my almost empty fridge and went above and beyond and tossed all the jars, bottles with a minute amount of food in them right before I came here to check out Menu Plan Monday!
I usually clean out on Thursday b/c garbage day is Friday, but like you I did a good job using everything this week 🙂
I will be doing a decent shop sometime this morning.

Oh I can totally relate to an empty fridge….I would also like to add to that an empty pantry too. Right now I feel like I have a ton of little odds and ends that need to get eaten up… I may need to get really creative in the upcoming weeks.

An empty fridge on Sunday is great! It is a lot easier to wipe the whole thing down when I don’t have to move things around.

I made the Parmesan Chicken Bake last week, although the recipe I found used Mayo, I substituted it with yogurt. Not Greek, but whole milk yogurt. It really is easy and a lot better then I thought it would be!
