I’m alive! I am finally over the flu here, thank goodness! We may not have eaten the healthiest meals last week but dinner got on the table one way or another. Sometimes we just need to cut ourselves a little slack. This week I’m back on the band wagon and a huge thanks goes out to my family for filling in the gaps.

Potluck Dinner Club:
This week I’ll be heading to our monthly dinner club again. The theme this time is bedtime snacks which I am loving so much. I’m a big time snacker and my downfall isn’t all the sweet stuff. Nope, I’m a total salty girl instead. However when I saw this recipe for yummy Homemade Caramel Popcorn over at Gimme Some Oven I couldn’t wait to give it a try. It just looks so good!!
My Weekly Menu Plan:
Monday: Black Bean & Cheese Quesadillas
Tuesday: Easy Crock Pot BBQ Pulled Pork served on buns and served with raw veggies
Wednesday: Leftover buffet
Thursday: Happy Valentine’s Day! Bacon-Wrapped Beef Filets served with Hashbrown Potato Cassserole, veggies and for dessert No Bake Cherry Cheesecake (family favorite!)
Friday: Homemade Pizza (dough in the bread machine)
Saturday: Low Fat Turkey Bacon Wraps
Sunday: Picking night!

I’m so glad that you are feeling better! I had a fun and relaxing weekend celebrating my birthday. Now it’s back to reality. Here is our menu for the week: (fingers crossed that the links work this time!)
Sat – pizza and a walk on the beach
Sun – Italian Veggie Pie, broccoli, salad
Mon – Italian Bean Soup, French bread, salad (didn’t get to this meal last week)
Tues – Potato and herb frittata, roasted brussel sprouts
Wednesday – Curried Vegetables and Dahl (Moosewood Restaurant Cooks at Home cookbook), brown rice, naan
Thurs – leftovers
Friday – Pizza or leftovers
