Hi everyone, I hope you all had a wonderfully relaxing weekend without too much busy busy 🙂
Okay so I had another kitchen mishap last week. Remember the delicious Whole Wheat Lemon Poppy Seed Muffins I mentioned last week? Look good don’t they?
Well they were delicious….the SECOND time I made them! You’ll never guess what I did. After I finished making the first batch my daughter came in to try one. She said mom these don’t smell so good. I thought something seemed off when I was making them but I couldn’t quite put my finger on why. We both went ahead and tried one and went yuck at the same time. They were terrible! Now this kind of stuff happens to me all the time so immediately I thought what did I do wrong this time? Turns out I used rancid whole wheat flour….oh yes I did. Don’t ask me how I didn’t notice that (it really does smell horrible), I’m a real power baker can’t you tell? Not to be defeated though I went out, bought new flour, made up another batch and immensely enjoyed the way the muffins were suppose to taste. Sheesh!

Too bad about the rancid flour! 🙁 I think “they” talk about storing whole wheat flour in the refrigerator or freezer even to avoid that happening…I never do though!

I remember how whole wheat flour got funky. Now it’s the brown rice flour that I have to keep in the freezer so it won’t go rancid. That is the nastiest smell and taste. I keep all the gluten-free flours in the fridge or freezer now. Then, of course, I have to let it warm up to room temp before I bake which is a pain. Still, I don’t have to cry if that expensive flour goes bad.

Menu this week in no particular order: lasagna, Serbian ground beef, spaghetti and meatballs (from Bobby Flay Throwdown cookbook, pork & rice (a Hungarian dish), chicken burgers and fries, 40 clove chicken.

I keep my flour in the fridge. Can it go rancid in the fridge? I do it mainly to keep out those pesky mealy bugs that seem to magically appear.

I’ve never experienced rancid flour before. I did ruin a batch of banana muffins last week when I forgot to add the Turbinado. Yuck!

I’ve heard ww flour can go rancid, but haven’t experienced it. What a bummer! Those muffins do look good, though, so I can see why you tried again. 🙂

Hi Laura, I second or third the freezer. I keep all specialty flour in the freezer and some of my extra bags of white flour too, but I finally have an “extra” refrigerator now along with full size freezer and my beautiful new stainless steel with the freezer on the bottom and the two doors on top!
I don’t particpate in menu planning since it is just the two of us and never know how many leftovers we will have, but I still like to look at the links when I have time to get ideas for something different. Thanks for hosting so many motivaing parties!!
