Hi everyone, how was your weekend? Don’t you just love all the links to look through each Monday? I’m loving the inspiration and recipe ideas that is for sure. Well I don’t have really have much to talk about today as we had a pretty quiet weekend cooped up inside the house with all the snow and the cold we’ve been having here lately. Although I’m so not complaining as it’s nothing like what we use to get back home in northern BC. From what I hear they are getting it pretty bad again this year. Remember these pictures I took of my front yard a couple of years ago:

Monday: Easy Hawaiian Pita Pizzas
Tuesday: Dinner out!
Wednesday: Lasagna Soup (I’ll throw it into my slow cooker) served with Whole Wheat Butter Biscuits
Thursday: Leftover buffet
Friday: Crispy Oven Roast Chicken with Potatoes (I’ll use oil instead of butter so my son can eat it as well)
Saturday: Easy Italian Pasta Bake (I’ll add some diced peppers for a veggie)

We are forecast for sleet/snow this evening but I am so glad we have not got the amount of snow we had last year. Personally, I am ready for spring.

For the Lasagna Soup- do you just cook the meat and then throw everything in the crock pot together? Sorry- I’m an idiot cook. Just want to make sure I do it right :). It looks reallly good.

Hi Candace, yes I basically just cook up the soup according to directions but instead of throwing it into a pot I throw it into the crockpot and cook it on low for awhile.

Hi Sherry, the mac and cheese turned out really good. The eggs didn’t sit well with hubbie though (he’s allergic to them in some things) so I wonder if I could make it without. I’ll have to try that.

My week was really great! Thanks for askin! I am sooooo thankful that you posted the recipe for the Whole Wheat Butter and Honey Biscuits! I have been trying to find a good recipe for biscuits using whole wheat flour for a while now. Plus, I just got done pokin around his site and found some other really good recipes! I keep forgetting to ask: What are Simple Suppers? I keep seeing this on the menu and have been curious about it.

Simple suppers are how we clean up the fridge from the week so I can start fresh on Monday lol. Basically it’s “picking” night as my youngest calls it and everyone fends for themselves although we still all eat together. Pancakes or grilled cheese are also popular choices for that night. Just quick and easy is the name of the game 🙂

Looks like a tasty and low-stress menu this week. Looking at your snow shots makes me feel like a real wimp whining over 5 or 6 inches of snow. I’ll bet your little one will remember that big snow. Hope you don’t get one of those again this year. Stay warm.

Hi Wendy, we’ve now since moved to Alberta and while we are getting a fair bit of snow here it’s still nothing like what we used to have in BC like you see in the pictures there.

A couple of great looking recipes here! I have an eggplant I need to cook! Never cooked one before, but I think I will roast it. I don’t love eggplant, but love roasted veggies, so maybe I will like it ok!

Italian pasta bake. If I use the 4% lean beef and 2% cheese, I might be able to do that. I’m not sure about cooking my noodles in tomato sauce, though. I like them really soft. Great menu plan! And I’m thankful I don’t live in snow like that!

We’re thankful that we haven’t had as much snow this year as last year. But I guess what I consider to be a lot is still less than what you captured in those photos!

How long would you cook everything in the crockpot on low? If I start it at 7:00 a.m….. I’m thinking the noodles will be waaaay overdone by dinner at 6:30….. So, since I’m still trying to figure out crockpot stuff, what if I put everything BUT the noodles on low all day & then when I get home at 3:30 put the raw noodles in & turn it on high?… what do you think?

Yes I would definitely add the noodles at the end, that is a good idea as they won’t take that long to cook up.

I certainly can relate to that snow pile! I don’t think ours was ever quite that big though!!! We already have had 50 plus inches, which is usually what we get the whole winter and it is only January!!! Yikes!

I am definitely adding the Lasagna Soup to my menu plan this week! What a wonderful variation of just plain pasta and sauce (which we’ll still eat anyway…lol)! It finishes up my menu plan so I can start looking at others to plan for next week!
