Hi everyone!   Hope you are all doing well and ready to get menu planning for an organized week!

So my recipe highlight of last week definitely goes to the slow cooked Rotisserie-Style Chicken.  This recipe was so easy to prepare in the slow cooker and my hubbie gave it a 9 out of 10 for taste!  I say wow to that because he’s a tough critic.    The Makeover Creamy Italian Sausage Pasta recipe was also very good and easy to prepare.  I’ll definitely be adding both recipes to our Family Favorite Recipe Index.

Unfortunately I wasn’t a huge fan of the Oven Chicken Fingers though, they just weren’t crispy enough for me.  I’m going to keep experimenting with recipes on this one.

On my baking list this week is Kristi’s Famous Banana Chocolate Chip Muffins.  How about you?  Baking anything special this week?  Feel free to share your recipe link in the comments.

So here is what’s on our dinner menu:

Monday: Chicken Tortellini Soup (using homemade broth from last week’s chicken)

Tuesday: Slow Cooker French Dip (new)

Wednesday: Baked Chicken and Acorn Squash (family favorite)

Thursday: Leftover buffet

Friday: Baked Ziti with Spinach and Sausage (new)

Saturday: I’m hosting a ladies fondue party! (will post pictures next week)

We love acorn squash – it’s really good for you as well as just being tasty. Your menu sounds wonderful.

The slow cooker french dip sounds really good! I’m making alot of the same things I made last week, but my husband is happy and so are my kiddos! :-) The kid pleasing spaghetti was a HUGE hit in our house! I forgot to take out the (I’m new) in my name this week. I noticed it after I hit enter….sorry!

Your menu looks really good this week, I think I’m even going to save a few of the links you have posted.

I have spent the bulk of the day going through some food blogs. I am wanting to get back to cooking nice meals again, though it is hard to get the motivation to cook for one person again. I mean the last time I cooked for one person was 10 years ago and I was a college student and hadn’t yet really discovered “real” food, you know, or I thought it would be much more difficult than it is!

Because of some unexpected events I’m still working on my menu from last week. My kids requested banana bread so when the bananas are ripe enough we’ll bake that. It’s strange they requested it because I don’t bake often enough for a request to be made. Have a great week!

I have high hopes of baking this week. I’m planning to enter some of the recipes into a contest, so I can’t share those yet. We did manage to make pumpkin muffins this weekend, which was a long awaited triumph.

Sounds like a yummy week! Can’t wait to see pics of the fondue party! :)

Thought I would share with you my homemade oven chicken fingers recipe. I love them cause they do come out crispy and my guys love dipping them in sweet baby rays honey bbq sauce. :) They also heat back up real well too. :) Here is a link to them… oven fried chicken tender’s!

As for baking this week, it will all depend if I have the energy after being sick last week. I would love to at least get some banana muffins and some “puppy chow” made this week. I have a list of other things too that I want to fix to slide in the freezer for later on with the holidays coming but we shall see if I can handle doing more. :)

The slow cooker french dip sounds very good. My menu this week just isn’t doing it for me….after I typed it up it didn’t sound so bad but somehow I’m feeling rather un-inspired. I think I need to do more perusing of others menus this week to get some better ideas for next week.

Love the idea of menu planning, I am slowly converting!!!

Here is my fun baking idea for the week: My daughter loves mall pretzels and has been asking for one. I haven’t been able to get to the mall to pick one up, so I looked the recipe up online. These are delicious and a fraction of the mall price. I did read the comments and added 1/4 cup shortening (I know I know! :) to the dough and made 8 pretzels instead of 12. My daughter now thinks we should open up our own pretzel stand. Here is the link:

Regarding not crispy enough chicken fingers…

I bake mine at 450F. Also I’ve found that the breadcrumbs make a big difference — I use panko style breadcrumbs and then drizzle a touch of oil over them before baking. Uusally I turn them over about half way through.

It’s not quite the same as deep-fried but it’s got a nice crunch.

I have come across so many yummy sounding recipes that I’ve added to our “to try” list & I’ve also stumbled upon some great blogs that I’ve added to my favorites. I just made chocolate banana muffins for my Daisy Troop today and the girls made homemade butter by shaking heavy cream in a small jar. It was a huge hit!

Can you smell the banana bread that I just took out of the oven? Yummy!!!

Menu this week: Monday-sausage, potato and cabbage stew served with cheesy bread sticks; Tues-Impossible cheeseburger pie and veggies; Wed-Chicken burrito casserole and veggies; Thurs-crockpot chili; Fri or Sat-sausage and pepper burritos.
That’s what’s for dinner at our house this week.

The muffins look yummy. I’ve gotten into pudding pies this week. I add some chocolate chips and chocolate pudding to a graham cracker crust or add bananas and vanilla pudding to a Nilla Wafer crust. Yum!

Try using Panko bread crumbs on the chicken fingers instead of the regular bread crumbs. I use them in my favorite baked chicken tenders recipe and they always come out nice and crispy!

Tonight’s Minestrone Soup was just the ticket – the temperature went down after dark and we are all looking forward to something warm.
