I always get a kick out of it when Menu Plan Monday falls on the first day of a new month. Something so organized about that 🙂
I love finding new programs/software out there that might help make menu planning just a little bit easier for my readers. Today I’m reviewing The Dinner Solution software over on my review site and as well I’m giving away a copy to one of you over there. Be sure to check it out!
Last week I surprised myself by baking a pie from scratch. If you are looking for a super easy and delicious dessert I highly recommend this recipe for Strawberry/Rhubarb Pie. Yummy!!
The other recipe that was a hit last week was the Slow Cooker Teriyaki Ribs. I’m not a huge fan of pork myself but my hubbie couldn’t stop raving about them. I definitely appreciated how easy this recipe was to prepare though.
So here’s what we’ll be eating this week:
Monday: Fajitas
Tuesday: Cheesy Chicken Vermicelli (I’ll roast a whole chicken in the slow cooker during the day to use for this recipe)
Wednesday: Ranch Pork Chops served with perogies and corn on the cob
Thursday: Fuss Free Ravioli and Cheese Bake with added sausage and served with caesar salad
Friday: Leftover buffet
Saturday: Quick Homemade Pizza

I really want to try that pie recipe. I saw it last week and just looked so good! The ribs sounded good until I realized they were pork… anyway they could be altered for beef?

I’m so intimidated by this menu planning stuff. I want to do it so badly cuz I know how much easier it makes my week, and how nice it is to have everything planned and ready. I think I’m making it harder than it needs to be…hubby is sorta picky and I can be too…so I feel like I’m limited in my options, even though there’s lots of stuff we do like. Anyone else out there have a hard time talking themselves into it? I’m trying to get motivated, but I’m just not doing a very good job encouraging myself!

Oh Becky I know exactly where you are coming from. I always thought it would be so much harder to menu plan until I actually did it and realized just how much EASIER life is when you know what you’ll be eating each night. Menu planning means you get to pick the meals out (according to your preferences) in advance. It totally takes the guess work out of it. I honestly would be lost now if I didn’t do it, in fact I don’t think I could ever go back. I just want to encourage you to try it for a week and see how it goes. One way to start is just plan out 5 meals and buy the groceries but don’t assign them to any particular day. That provides a little more flexibility to your week and might reduce the intimidation factor a bit.
You can so do this! I hope to see you back here next week 🙂

Thanks for posting the link to the pie. I made it today, adding in some raspberries from my freezer because I needed a bit more fruit to fill my pie pan. It turned out awesome, though I still have a long way to go before I can do my grandma’s pie pastry recipe justice. And all these years I was too chicken to try rhubarb. Man, I was missing out!
