Chocolate Oatmeal Cookies

I haven’t posted a cookie recipe lately because it seems like my family is always requesting the same old chocolate chip cookies week after week after week.   I thought it was about time I broke them of their staid and complacent attitudes.  This Chocolate Oatmeal Cookie recipe did the trick and it passed their stringent scrutiny with flying colors.  Whew!

Chocolate Oatmeal Cookies

Ingredients:

2 cups all-purpose flour

1/4 cup and 2 tablespoons unsweetened cocoa powder

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

1 cup margarine (I used butter)

1 cup brown sugar

1 cup white sugar

2 eggs

2 teaspoons vanilla extract

2 1/2 cups rolled oats

1 cup semisweet chocolate chips

Directions:

Preheat oven to 350 degrees F.  Grease cookie sheets.  Stir together the flour, cocoa, baking powder, baking soda, salt and cinnamon; set aside.

In a large bowl, cream together the margarine, brown sugar and white sugar.  Beat in the eggs and vanilla.  Stir in the dry ingredients using a wooden spoon.  Mix in the oats and chocolate chips.  Drop by tablespoons onto cookie sheets, leaving 2 inches between cookies.

Bake for 8 to 10 minutes in the preheated oven, or until lightly browned.   Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Could you or one of your readers help me? I’ve tried to make chocolate chip cookies but I eat the ALL the chocolate chips before I get around to making the cookies :)

Yum! I think I have all of this on hand and I was trying to think up a way to use up all those plain oatmeal packets that come in our variety pack. Do you think instant oats will work?

Hey Laura,
I have found a new love in the oatmeal department it is the 9 grain oats it has all the good stuff in it flax, wheat germ etc so it is easy to health up your oatmeal cookies by using this instead of regular oats…..yum

I made these cookies last night! Mine were a bit salty =( Next time I may just do a half teaspoon of salt…otherwise they were good!
