Many of you participating in Menu Plan Monday also deal with food allergies so I thought I’d share this ice cream recipe that I’ve been making for my son for years. He loves it although keep in mind he’s never tasted regular ice cream 🙂 My ice cream maker is a simple one (Cuisinart) and it does the job just fine.
As a parent of a food allergic child I know how rewarding it is to be able to offer something similar to what the other kids are eating. If sharing this recipe helps even just one person, I’m a happy girl. Enjoy!
Vanilla Dairy-Free Ice Cream
2 cups dairy alternative, divided (I use Rice Milk)
2 cups safe marshmallows (I use Jet Puff)
1/3 cup sugar
3 tbsp oil (I use Canola)
1 tsp safe vanilla extract
1 package gelatin (I use Knox)
In a medium saucepan combine marshmallows, sugar and one cup of dairy alternative. Stirring constantly bring marshmallow mixture to a slow boil until sugar and marshmallows have dissolved. Remove from heat and allow to cool. Meanwhile combine gelatin, one cup of dairy alternative and oil, allow to stand for five minutes. Using a stand or hand mixer (I use a whisk) beat gelatin, oil and dairy alternative mixture until foamy. Add vanilla. Combine all ingredients together and transfer to the frozen canister of an ice cream maker. Process according to manufacturer’s instructions (mine takes approx. 20 minutes).

We have found the best product for ice cream. BRYERS sells a lactose free vanilla ice cream (black box, little red lactose free sign). Real ice cream that has been made lactose free like the lactaid mail. It is sold at Super Target and Walmart. Check the stores in your area. We love it and all eat it so our stores will continue to stock it. It has really helped her.

I have the Cuisinart ice cream maker too, Laura. This recipe looks easy and sounds good too. Your photo made me remember I need to get my Cuisinart out and put it on the counter where I’ll remember I need to make ice cream.

Sounds Good, we’ll try it. For all those lactose intollerant Dryers now makes a lactose fee icecream. It is a whopping $5-$6 for 1 1/2 quarts but for special occasions my daughter loves it as a treat.

Thank you for sharing this! My son previously could have coconut ice cream, but now he has tested allergic to that as well – and soy is out, the rice milk ice cream in the store even has soy in it, glad to have something we can make for him that is safe!

Is there a trick to getting the rice milk, canola oil and dissolved gelatin foamy? I’m using a cold bowl and beater on my Kitchenaid stand mixer. It’s not getting foamy at all after five minutes.
This is my second attempt. I did freeze the first try in my ice cream maker and the flavor is great…just not a light texture.

I just used a regular bowl and a whisk and it got foamy for me. Not sure why it didn’t for you. It could be the type of gelatin. I just used the Knox brand.
