We are actually in the process of looking for a new home and I decided years ago our current kitchen was too small so why try and organize it. Well the last few months, even in the midst of gearing up to move I've been organizing the kitchen. If I don't get it together now I won't in our new home either! Love the dollar store. I also keep excess elsewhere. I've lived overseas with constant blackouts, no power, empty grocery stores etc. so keeping a stash of food is in my blood. I’m having the same epiphany as Erin.
