Menu Plan Monday ~ July 23rd

Hello everyone!!

I’m pretty sure we set a record last week with over 160 participants…WOW!!!! That’s a lot of menu planning going on….just fantastic! I hope you are finding that it is making a difference in your week.

Some housekeeping ~ please try to keep “your name” in Mr. Linky to three or four words. We’ve been having a problem with the rows pushing out. Thanks!

Previous week recipe highlight ~ all the recipes from my menu last week were enjoyed but if I had to pick my most favorite from the week it would be the Baked Honey Mustard Chicken.

This week my menu is all about salads. I just love summer salads…..somehow veggies just taste better when smothered in dressing :)

Monday: BBQ Hamburgers and Apple Spinach Salad
Tuesday: Tropical Chicken Packets served with rice
Wednesday: Club Quesadillas served with Fruit Slaw in a Cabbage Bowl
Thursday: Leftovers
Friday: Quick and Easy Steak Salad

    First of all, YEY for so many participants! That’s great! I really benefit from everyone’s great ideas. I have always had a menu plan, but sharing them in this way has really expanded my culinary horizons. :) Your menu looks so yummy- I’ve bookmarked the chicken packets, and my kids would love those club quesadillas, too.     I’ve been menu planning for years now but trying to stick to it better. I am loving the recipes from you and other participants-helps keep a little variety in my menu planning!!

    This meme has made cooking and planning a little bit more fun than it used to be! So many great recipes and ideas–helps keep things fresh and my attitude motivated to stick to it!
    A couple of your recipes need to make it into my meal plan real soon–what a great looking week you have.

    Mmmm…that apple spinach salad sounds soooo good! Too bad no one else in the house would eat it. Of course, that would just leave more for me, huh?

    My menu is up…no weight watchers points this week. Maybe next week.
    I love the thought of summer salads. You just might see some of those same salads pop up on one of my upcoming menus!!

    mmm it’s all looking good again this week. Summer salads are awesome. I’m doing gazpacho this week because what better way to use all the fresh cucumbers and tomatoes? The baked honey mustard chicken is on my menu for tonight. It looked way too good to pass up. I am going to use a whole chicken though instead of the chicken breasts, so I’ll have to adjust the seasonings to be enough… shouldn’t be too hard. :) Thanks for hosting! I’ve done menu planning for three weeks in a row now. organized me!

    This worked so well for me last week that I’m going to make it a weekly thing. My husband works for Schwans and we have a freezer full of food that gets buried by new stuff and we never eat it. This is going to help me eat what we have before getting more!
