Menu Plan Monday & Chicago-Style Pan Pizza recipe



Hello! A Juggling Mom has a terrific food blog and she gave one of my menu recipes a thumbs up….the Foil Pack Taco Chicken Dinner. It really is a great “dish”, it was a favorite in my house as well. Her review reminded me that I haven’t made this recipe in awhile so I’m including it in my menu this week.I received an email from a reader asking if I knew whether any of the participants in MPM specifically featured weight loss/weight watcher menus and recipes. So here is what I’d like to suggest. If your menu includes low fat recipes please let us know in brackets (low fat) beside your name in Mr. Linky. Thanks!

Here is my menu for the week:

Monday: Foil Pack Taco Chicken Dinner

Tuesday: Grilled Honey Mustard Pork Chops

Wednesday: Fajitas

Thursday: Leftovers

Friday: Chicago Style Pan Pizza - recipe below

Chicago -Style Pan Pizza

1 loaf (1 pound) frozen bread dough, thawed
1 pound bulk Italian sausage
2 cups shredded mozzarello cheese
1/2 pound sliced fresh mushrooms
1 small onion, chopped
2 tsps olive oil
1 can (28 oz) diced tomatoes, drained
3/4 tsp dried oregano
1/2 tsp salt
1/2 tsp fennel seed, crushed
1/4 tsp garlic powder
1/2 cup grated parmesan cheese

Press dough onto the bottom and up the sides of a greased 13×9x2″ baking dish. In a large skillet, cook sausage over medium heat until no longer pink; drain. Sprinkle over dough. Top with mozzarella cheese.
In a skillet, saute mushrooms and onion in oil until onion is tender. Stir in the tomatoes, oregano, salt, fennel seed and garlic powder. Spoon over mozzarella cheese. Sprinkle with Parmesan cheese. Bake at 350 for 25-35 minutes or until crust is golden brown. Yield: 6 slices.

    Apparently I didn’t read your post closely enough because many of my meals are considered pretty healthy and lowfat.

    I live in the Chicago ‘burbs. Best Chicago-style pizza is Lou Malnatti’s. You can even order it online and they’ll ship it to you!

    But you won’t want their sausage. The pepperoni is great! And they have a cornmeal crust to die for!

    I hope my laptop can handle drool!

    I’m having to do the main part of my grocery shopping for the next three weeks in one go, with just mini trips to the store in between. That’s changed our menu a little form normal, but this week is really using up what was in the freezer.

    Just thought I’d let you know that even though I’m taking some much needed time away from the internet (not reading blogs, forums, or most mail, nor am I blogging much of anything, including my accounting) I AM still posting my menus. I had considered not posting them, but it’s already become such a good habit that I’m not willing to give up!

    Also, if I didn’t post the menu every week, my husband wouldn’t know what we were eating. He gets the email notification when I post the menu and I like it a lot better now that he doesn’t call me from work several times a day… every day… sometimes with the sole purpose of asking “what’s for dinner?”. Whenever he wants to know, he just has to check his email!

    I wanted to say thank you, too, because usually these self-imposed vacations away from the internet end up with me being completely reluctant (or just plain unwilling) to return. Coming on line every week for MPM has me WANTING to come back even though I still have some stuff to work through and won’t allow myself to fully return until it’s all settled.

    I have to say that last week was my first go at Menu Planning Monday and I am so happy I got involved! It saved me stress over deciding what to make and money as I wasn’t running to the grocery store everyday picking up stuff. As I did all my shopping in one go, I found it wasn’t necessary to go out and get things I didn’t need. Thank you for Menu Planning Monday!

    This Chicago-style pizza sounds wonderful too. My husband is from the Chicago area - I’ll have to give this a shot and see if it meets his approval. ;-)
