Menu Plan Monday and Tortellini Salad recipe

Today we had our first real taste of summer….finally! Beautiful sunny weather and a cookout with friends. Fantastic! The best part…..tomorrow is a holiday for us here and the kids don’t have school which means we can sleep in…yeah!

So here is my menu plan for the week:

Monday: Tortellini Salad (recipe below) - delicious!

Tuesday: Hawaiian Chicken Bake

Wednesday: Ground Beef Shepherd’s Pie

Thursday: Leftovers

Friday: Garden Fresh Pasta Salad and BBQ steak

Tortellini Salad

1 pkg (19 oz) frozen cheese tortellini

1 1/2 cups julienned zucchini

1 1/2 cups julienned yellow summer squash

1 cup sliced mushrooms

1 tbsp olive oil

1 tbsp minced garlic

3/4 tsp Italian seasoning

1/4 tsp pepper

1 cup julienned sweet red pepper

1/2 cup sliced red onion, halved

1 cup balsamic vinaigrette

Cook tortellini according to package directions. Meanwhile, in a large skillet, saute the zucchini, yellow squash and mushrooms in oil until crisp-tender. Stir in the garlic, Italian seasoning and pepper. Cook 1 minute longer or until garlic is tender.

Drain tortellini and rinse in cold water. Place in a large bowl; add the squash mixture, red pepper and onion. Drizzle with vinaigrette; toss to coat. Serve immediately or refrigerate. Serve with a slotted spoon. Yield: 7 servings.

    Glad you had a nice day and get to sleep in tomorrow - Awesome!

    I’d like to try the Tortellini Salad - it sounds delicious - and so summery.

    Our menu this week is as simple as I could make it. I am feeling really tired! We are using paper plates and all meals should be made in 30 minutes or less (I hope).

    Beware, there are those pie purists out there who will accuse you of having a “cottage pie” rather than a “shepherd’s pie.” Personally, I’m happy as long as there is meat smothered in potatoey goodness.

    Tortellini salad is so versatile! I do a really easy one (no dressing!) where I add chopped sundried tomatoes (packed in oil) and chopped roasted red peppers (or yellow) to the tortellini. Some sliced black olives and a bit of grated romano cheese and you have a salad!
