Menu Plan Monday - May 14th

I hope everyone had a beautiful Mother’s Day today! I know I did and enjoyed getting spoiled!

We had such a good time today that I’m late getting this post up and I do apologize to all of you who wait up.

Previous week recipe notes:

Cheesy Chicken and Rice Casserole - didn’t go over well in this house
Makeover Ham ‘n’ Potato Bake - was pretty good but a little too much work for my liking :)

Here is my menu for this week:

Monday: Fajitas
Tuesday: Slow cooked 40 Clove Garlic Chicken served with mashed potatoes and carrots
Wednesday: Slow cooked Sweet ‘n’ Sour Pork Chops (from the new S&D June 07, if it’s good I’ll share the recipe on Thursday) served with rice and broccoli
Thursday: Leftover buffet
Friday: Black Bean Pizza

    still a little scared of the 40 clove garlic chicken but i am working my way up to it! the black bean pizza sounds so yummy i just might replace my boboli pizza night with it! have a fantastic week :O)

    Happy Mother’s Day to you! That Black Bean Pizza really does sound good! I don’t think anyone in my family will eat it, but I may have to make it just for myself!!

    I’ve been wanting to try the 40 clove chicken — I didn’t look at the link. Is it Ina’s? I will have to do that soon … This week is rough for my menu, but there is at least one yummy to look forward to.

    If I participated in Menu Plan Monday, here would be mine for this week:

    Monday - no dinner - it’s Bunko night. Snacks and goodies at Elizabeth’s.

    Tuesday - dinner out with Vickie and her kids

    Wednesday - leftover chicken from Red Lobster. Make some instant mashed potatoes and open and heat small can of carrots.

    Thursday - Nuke Lean Cuisine frozen dinner

    Friday - Nuke frozen Stouffer’s Veggie Lasagna

    LOL I think the last time I actually cooked was last month - I made a meal for a family in our church who had a death and I made enough for me to have throughout the week. Oh, I did make a grilled cheese sandwich w/ tomato soup for dinner on Saturday!

    I still enjoy reading your Menu posts even though I don’t cook!

    They have a place to find retailers and there are some in Canada, but I’m not sure exactly where you are. Just thought I’d pass it along incase.

    Didn’t Alton Brown do a special on garlic and use 40 clove chicken as one of the recipes? I don’t have cable so it would have had to have been a while ago. (How is that for clumsy grammar?)

    Yummy! Your menu looks delicious! We’re trying the pizza pancakes this week and looking forward to it!

    I desperately want to try the 40 clove chicken, but my crockpot is on the smallish size and there are only 2 of us… do you (or anyone) have any ideas about how I would go about shrinking the amount I would make?
