I’m looking forward to getting some new ideas from everyone this week. I feel like I may be stuck in a rut. It is taking longer and longer for me to decide my menu on Sunday evening. I always do up my menu plan on Sunday nights because I always get my groceries first thing Monday morning. I love starting the week out with a house full of groceries. It is a great feeling. I’m a creature of habit and I would definitely get twitchy if I had to do my grocery shop at any other time although sometimes I live on the edge and go say in the afternoon instead…lol. That’s about as wild and crazy as it gets around here….woohoo!

So my menu for this week consists of:

Monday: Quick Fettucine Cacciatore
Tuesday: Slow cooker Pork Chops with Spiced Fruit Stuffing (recipe below)
Wednesday: Slow cooker Sweet Aromatic Chicken (from Fix it and Forget it) served with rice and carrots plus Devilish Valentine’s Cake for dessert….yum!
Thursday: Leftovers
Friday: Fajitas

Pork Chops with Spiced Fruit Stuffing

1 cup diced fruit and raisin mixture
1 cup chicken broth
1/2 cup apple juice
3 tbsp butter
1/4 tsp cinnamon
1/8 tsp nutmeg
1 pkg herb seasoned one step stuffing mix
4 boneless pork loin chops (about 2-in thick)
1/8 tsp salt
1/8 tsp black pepper

1. In large saucepan, combine dried fruits, broth, 1/4 cup of the apple juice, butter, cinnamon and nutmeg. Bring to a boil. Stir in stuffing mix. Remove from heat.
2. Arrange pork chops in bottom of 3.5-4 quart slow cooker. Pour remaining 1/4 cup apple juice over pork. Sprinkle with salt and pepper. Top with stuffing mixture.
3. Cover; cook on low for 5 to 6 hours.
4. Remove from slow cooker; place in serving bowl.

Serves: 4

I had a hard time planning my week, too. I got stuck on the last couple meals cuz I didn’t want to repeat too much. :)

I’ve been trying to use my crock pot more to make my work load a little easier, but I’m still getting into the hand of that. :)

Had to laugh about food shopping on Mondays! Me too! If I don’t have the pantry re-stocked by Monday night I know it’s going to be a bad week!

Your pork chops sound divine!!!

I managed to mostly clear my freezer so I went and got some meat on Saturday. I do my planning on Sunday but after I shop – I have a rough idea in my head already though.

Is this your chicken recipe? It looks good!

SWEET AROMATIC CHICKEN: Makes 4 servings
1/2 cup coconut milk
1/2 cup water
8 Chicken thighs or Chicken parts, skinned
1/2 cup brown sugar
2 Tbsp. soy sauce
1/8 tsp. ground cloves
2 garlic cloves, minced

Combine coconut milk & water and pour into a buttered crockpot. Add remaining ingredients in the order listed above. Cover & cook on low 5-6 hours. Note: Use 2 or 3 spoonfuls of the leftover coconut milk over vanilla ice cream OR make family pina coladas by pouring remaining coconut milk into a pitcher & add 1 large can of pineapple juice with some ice cubes…decorate with pineapple chunks & cherries.

Yum! I also shop on Mondays and try to avoid the grocery store the rest of the week. I’m trying to think how the spiced fruit stuffing might taste by itself or with some tofu or vegetarian sausage?

I’m in a rut too…I’m taking some time out to surf for recipes…I did yesterday for about 20 minutes and today I’m going to do the same. I did however decide I need to exp in some different cultured foods…..right now we are checking out Asian….I noticed last week you had almost 100 comments…you go girl…you have done well with this…..

Hi Laura – I’ve only recently discovered your blog through a series of links that began at Rocks in My Dryer. I’m a Southern girl, thirty-something, recently transplated to the frozen mid-West with my husband and 2 year old daughter. I have REALLY enjoyed looking over several of your ideas and articles… I’m a bit of an organization junkie, myself, although more sporadically so than you. I have found the key to not getting in a rut is always have plenty of new reipes on hand. I am constantly reading a cookbook or magazines. Thanks for doing this.

Menu planning around here gets interesting because our Commissary is always closed on Monday. I think all of them are for the whole military! And I almost never get to shop on the weekend!

for new ideas- have you seen “Quick Fix Meals” on food network? I just found it and am going to try some of her plans. She preps ahead and reuses some ingredients (like using one flank steak in three different meals.) I linked to it on my blog :)
