Slow Cooking Thursday ~ Black Bean Soup


Katelyn’s Black Bean Soup
(from Fix It and Forget It Cookbook Pg 60)

1/3 cup chopped onions

1 garlic clove

1-2 Tbsp oil

2 15.5 oz cans black beans, undrained

1 cup water

1 chicken bouillon cube

1/2 cup diced, cooked, smoked ham

1/2 cup diced carrots

1 dash, or more, cayenne pepper

1-2 drops or more Tabasco sauce

sour cream

Saute onion and garlic in oil in saucepan. Puree or mash contents of one can of black beans. Add to sauteed ingredients. Combine all ingredients except sour cream in slow cooker. Cover. Cook on Low 6-8 hours. Add dollop of sour cream to each individual bowl before serving. Makes 4-6 servings.

    Ooh yum, this sounds good Laura! Have you made this one before? I have the FIFI cookbook (original one), but there are SO many recipes in there, sometimes I get overwhelmed when I’m going through it, looking for something to try. Always on the lookout for ones people have tried and recommended.

    We love black bean soup, and I have a quick one I do on the stovetop, as well as a black bean chili. I’ll definitely print this out to try, thanks for sharing :)

    OH my word…I LOVE bean soup and this looks wonderful Laura.

    I don’t have the Fix it and Forget it cookbook, I have the Fix it and Enjoy it LOL I need to get the Forget it one because that’s most likely to happen with me LOL
